On arrival in the cellar, the grapes are gently pressed. Vinification takes place at a controlled temperature to ensure gentle extraction of the fruit. De-alcoholisation is carried out at the end of fermentation by cold distillation, without the addition of any external elements, to preserve the wine’s structure and aromas.
